La Latina, Madrid

La Latina, Madrid

Captured during the early part of my week-long visit to Madrid. This afternoon was also my first attempt at heading out on a day trip, either to Toledo or Segovia per the recommendations I received from some new friends. Mañana, I’d suggest to myself.

As it would turn out, I’d never make it out of Madrid, and that was ok.

The tree-lined streets with people who filled up the outdoor seating, enjoying their meal and a tinto de verano (like a play on sangria), or the gentle breeze that made its way through Retiro park while I splayed out on my back to read a book was enough and everything for me.

Pictured above is a snap from La Latina, a popular neighborhood for restaurants and bars and nightlife. And for playing hooky from day trips to neighboring cities.

Saturated Saturday is a new photo series highlighting some of my favorite images, with enhanced vibrant colors courtesy of the photo editing apps I like at the moment. These include: VSCO, Instagram, A Color Story. Most photos taken with iPhone 6s.

Reading these while trying to stay cool in San Diego this weekend (forecast warns temps to hit over 110 degrees in some parts of the county!). These two posts were especially vivid, as details often are when you are familiar with an experience.

My eyes skipped over the author’s thoughts, nodding in agreement as they describe the very scenes seen with my own eyes, name neighborhoods where I’ve clinked glasses and mugs and raised a shot to, and highlight proof point after proof point the urgent reasons one needs to visit NOW.

After a month in Europe, which was heavy on the meats, cheeses and LIBATIONS, working more veggies in to my meal planning this month is at the top of my priority list. That, and accepting the fact that I have to drive everywhere again.

When I’m looking for a cheap and easy, plant based protein fix I turn to lentils and chickpeas. Usually, I’m eating them separately. In lentil soup, chickpeas in hummus form though never together.

With Haaps & Barley‘s take on a salad from one of her go-to Melbourne spots, I (and you, if you’re a fan of lentils and chickpeas too) can have the best of these nourishing ingredients. Jill says this salad can be served at room temperature, so it’s a perfect companion for your office lunch hour. Or, if you work from home like me, it’s ok to take it out of the fridge after making it the day before and forget about it in the kitchen while you “wrap up” a few emails, only to remember it an hour or two later.

Enjoy!
